There is always a reason for everything, whether it's farming or cooking. In agriculture, it's the sun, light, temperature, CO2, EC, etc. In cooking, it's temperature, salt, the structure and taste of proteins and carbohydrates. There is always a reason, and that's why we want to know more about it. Once we know, we become obsessed with the value of each grain and each dish.

Continuity, driven by the strength of one's dedication, can only bring about change in the world if one continues until success is achieved. This change can be brought about on a scale that one person cannot accomplish alone, and at the same time, one grows as a person. I founded Awaji Island Vegetable Garden in the hopes of creating such a place.
